Delicious and healthy gluten-free banana oat muffins that are vegan-friendly and perfect for a quick breakfast or snack.

Ingredients

Bananas

  • 1 cup mashed bananas (about 2-3 bananas)
  • 2 tablespoons melted coconut oil
  • ¼ cup pure maple syrup
  • ¼ cup coconut sugar
  • 2 flax eggs flax eggs (prepared by mixing ground flaxseed with water)
  • ½ cup unsweetened non-dairy milk (room temperature)
  • 1 teaspoon pure vanilla extract
  • 1 ¾ cups gluten free oat flour
  • 1 ¼ cups gluten free rolled oats
  • 1 ½ teaspoons baking powder
  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • 2 tablespoons gluten free rolled oats (for topping)
  • 1-2 teaspoons coconut sugar (for topping)

Instructions 

  • Preheat oven to 325°F (160°C). Line a muffin tin with liners.
  • Mash bananas in a bowl. Mix in coconut oil, maple syrup, sugar, flax eggs, milk, and vanilla.
  • Stir in oat flour, oats, baking powder, baking soda, and cinnamon until just combined.
  • Divide batter evenly into muffin cups. Optional: sprinkle tops with oats and sugar.
  • Bake for 22-30 minutes. Cool on a rack before serving.

Notes

Store muffins in an airtight container for up to 3 days or freeze for longer storage.
