A delicious vegan and gluten-free pear tart infused with ginger, perfect for a cozy dessert or special occasion.
Ingredients
Crust
1cupsorghum flour(*)
0.5cupbrown rice flour
0.5cuptapioca flour(also called tapioca starch)
1Tbspground chia seeds(*)
0.5tspsea salt
10Tbspcold vegan butter(cut into cubes)
4-6Tbspwater
Filling and Topping
3mediumpears(ripe but still slightly firm)
0.5cupbrown sugar
2 ½tspground ginger powder
3Tbsplemon juice(from 1 medium lemon (~45 ml))
2Tbspcold vegan butter(thinly sliced)

Instructions
Mix flours, chia seeds, and salt; cut in vegan butter until sandy. Add water gradually until dough comes together. Chill for 20-30 minutes.
Prepare pears by slicing thinly and set aside. Mix brown sugar and ginger.
Preheat oven to 400°F (204°C). Roll out dough, fit into tart pan, and spread 2/3 of sugar-ginger mixture on the crust. Arrange pear slices, drizzle lemon juice, sprinkle remaining sugar-ginger, and top with sliced vegan butter.
Cover with foil, bake for 25 minutes, then remove foil and bake 28-35 minutes until golden and pears tender. Cool before serving with ice cream or whipped cream.

Chill the dough well for easier handling and ensure pears are sliced uniformly for best presentation.
