A hearty and nutritious vegetable soup packed with fresh flavors and wholesome ingredients, perfect for a comforting meal.

Ingredients

Vegetables

  • 6–8 cloves Garlic (minced)
  • 1 medium Onion (chopped)
  • 2 pieces Carrots (sliced)
  • 2 medium Potatoes (diced)
  • ½ cup Sweet Corn
  • 1 cup Cabbage (shredded)
  • 1 chopped Bell Peppers
  • 2 chopped Tomatoes
  • ½ cup Green Beans (chopped)
  • 2 tbsp Olive Oil
  • to taste Salt
  • ½ tsp Black Pepper
  • Herbs parsley or thyme (fresh)
  • 4 cups Vegetable Broth

Instructions 

  • Wash and chop all vegetables, mince garlic.
  • Heat olive oil, sauté onions until translucent, add garlic and cook until fragrant.
  • Add carrots, potatoes, beans, and peppers; cook for 5 minutes.
  • Pour in vegetable broth, add tomatoes, cabbage, and corn; bring to boil, then simmer for 20–25 minutes.
  • Season with salt, pepper, and herbs; adjust seasoning, then serve hot garnished with parsley.

Notes

Feel free to add more herbs or adjust seasoning to taste.
