Instructions
Wash and chop all vegetables, mince garlic.
Heat olive oil, sauté onions until translucent, add garlic and cook until fragrant.
Add carrots, potatoes, beans, and peppers; cook for 5 minutes.
Pour in vegetable broth, add tomatoes, cabbage, and corn; bring to boil, then simmer for 20–25 minutes.
Season with salt, pepper, and herbs; adjust seasoning, then serve hot garnished with parsley.
Notes
Feel free to add more herbs or adjust seasoning to taste.
