  • 4 cloves garlic, minced

  • salt and pepper to taste
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions

  • Toss diced potatoes in olive oil, garlic, salt, and pepper.
  • Spread in a single layer on a baking sheet and roast for 35-40 minutes, turning halfway through.
