Ingredients

  • 1 pound salted butter, softened
  • 5 cloves garlic, grated
  • 0.5 cup finely grated parmesan cheese
  • 1 lemon zest and juice
  • 1 teaspoon salt
  • 1 teaspoon red pepper flakes
  • 0.25 cup fresh parsley, chopped (optional) (for serving)
  • 3 pounds boneless, skinless chicken thighs, cut into 2-inch strips
  • 2 teaspoons salt
  • 0.5 teaspoon black pepper

Instructions 

  • Melt butter, then mix in garlic, parmesan, lemon zest and juice, salt, and red pepper flakes to make the sauce.
  • Trim skewers and thread chicken strips onto each skewer. Season with salt and black pepper.
  • Brush skewers with garlic parmesan butter. Cook at 350°F (175°C) for 15 minutes, basting halfway.
  • Pour remaining sauce over cooked skewers, garnish with parsley and parmesan, and serve with lemon wedges.
