Ingredients

Protein

  • 1.5 lb chicken breasts or thighs, cubed
  • 3 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1-2 tsp no salt added lemon pepper seasoning
  • 0.5 tsp salt
  • 0.25 cup lemon juice
  • 4-6 Tbsp butter
  • 3 cloves garlic, minced
  • 0.25 cup parmesan, grated
  • 2 tsp lemon juice (optional)
  • 3 Tbsp fresh parsley, chopped (or cilantro)
  • 1 small lemon, sliced for garnish (optional)

Instructions 

  • Marinate chicken with lemon juice, garlic, paprika, onion powder, lemon pepper, and salt for 10 minutes.
  • Thread chicken onto skewers and grill over medium heat for 10-12 minutes until cooked through.
  • Melt butter and mix with Parmesan, minced garlic, and chopped parsley.
  • Brush the cooked skewers with the garlic Parmesan butter and garnish with lemon slices and additional parsley if desired.

Notes

For extra flavor, marinate longer or add a squeeze of fresh lemon before serving.
