A flavorful and satisfying sandwich combining tender garlic herb chicken, fresh herbs, sun-dried tomatoes, and creamy cheese on toasted bagels.

Ingredients

Protein

  • 8 oz boneless, skinless chicken breasts (about 225 g)
  • 3 cloves garlic, minced
  • 2 1/2 tbsp olive oil, divided
  • 2 tsp fresh lemon juice, divided
  • 1 tsp dried Italian seasoning
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Dairy & Herbs

  • 4 oz plain cream cheese, softened
  • 2 tbsp finely chopped fresh basil
  • 1 tbsp finely chopped fresh parsley (optional)
  • 1 tbsp finely grated Parmesan cheese

Bread & Toppings

  • 2 plain bagels bagels, split
  • 1/4 cup oil-packed sun-dried tomatoes, drained and sliced
  • 1 cup baby spinach leaves
  • Optional 2 slices provolone or mozzarella, 1–2 tsp oil from sun-dried tomato jar (optional)

Instructions 

  • Mix 1 1/2 tbsp olive oil, 2 minced garlic cloves, 1 tsp lemon juice, Italian seasoning, salt, and pepper. Marinate chicken 10–15 minutes.
  • Mash cream cheese with herbs, Parmesan, remaining garlic, lemon juice, salt, and pepper until smooth.
  • Cook chicken in a skillet with 1 tbsp olive oil for 4–6 minutes per side until cooked through. Rest 5 minutes.
  • Toast bagels until golden. Slice rested chicken thinly and layer on bagel bottoms with cheese if using.
  • Spread cream cheese on bagel halves, add spinach, chicken, sun-dried tomatoes, and drizzle oil if desired. Cap with bagel tops and serve warm.

Notes

For extra flavor, add cheese slices while the bagel is warm to soften.
