A quick and flavorful one-pan meal featuring crispy potatoes and juicy chicken in a garlicky butter sauce, perfect for a satisfying dinner.

Ingredients

Main ingredients

  • 4 pieces chicken thighs or breasts (swap as desired)
  • 1.5 pounds crispy potatoes (cut into chunks)
  • 4 cloves garlic (minced)
  • 3 tablespoons butter (for sauce and cooking)
  • 1 tablespoon olive oil (for frying)
  • 1 lemon lemon (for squeezing at the end)
  • 2 tablespoons parsley (chopped, for garnish)

Optional add-ins

  • 1 cup green beans (to stretch the meal)

Instructions 

  • Cook potatoes in a pan until crispy, then set aside.
  • Sear chicken until golden, then remove from pan.
  • Add garlic and butter to the pan, cook briefly, then return chicken and potatoes. Add green beans if using.
  • Finish with a squeeze of lemon and sprinkle parsley before serving.

Notes

For extra flavor, add a pinch of red pepper flakes or your favorite herbs.
