A flavorful one-pan meal featuring tender chicken strips, crispy potatoes, and aromatic herbs, all cooked in garlic butter and soy sauce for a savory finish.

Ingredients

Protein

  • 1.5 lb chicken breast, cut into strips

Vegetables

  • 1.5 lb baby yellow potatoes, quartered

Oils & Fats

  • 1 tablespoon olive oil
  • 3 tablespoons butter, divided

Aromatics & Herbs

  • 5 cloves garlic, minced
  • 1 teaspoon fresh thyme, chopped
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh oregano, chopped

Seasonings

  • to taste Salt and fresh cracked pepper
  • optional Crushed red chili pepper flakes

Sauces & Condiments

  • 0.25 cup low sodium soy sauce ((or coconut amino))
  • 1 tablespoon hot sauce (e.g., Sriracha)

Additional

  • to taste Fresh cracked pepper

Instructions 

  • Marinate chicken in soy sauce, olive oil, pepper, and hot sauce; set aside.
  • Parboil potatoes in salted water for 8 minutes, then drain.
  • Cook potatoes in skillet with 1 tbsp olive oil and 1 tbsp butter until golden, about 8 minutes.
  • Sear chicken in skillet with remaining butter, garlic, and chili flakes until browned, about 2 minutes per side. Add marinade and herbs, cook until chicken is done. Return potatoes to pan and heat through.
  • Adjust seasoning, then serve garnished with chili flakes, herbs, and optional parmesan.

Notes

For extra flavor, sprinkle with parmesan cheese before serving.
