Instructions
Heat 1 tablespoon of butter in a large skillet over medium heat. Add diced onion and cook for 3-4 minutes until softened.
Add ground beef to the skillet and cook until browned. Drain excess fat if needed. Add minced garlic and cook for 1 minute.
Stir in rice, beef broth, Italian seasoning, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 18-20 minutes.
Melt remaining butter in a small saucepan, add milk and cheeses, whisk until smooth. Pour sauce into the rice and beef mixture, stir thoroughly.
Cook uncovered for 2-3 minutes, then sprinkle with parsley before serving.
Notes
For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon before serving.
