A quick and flavorful skillet dish combining lean ground beef with fresh vegetables and Italian seasonings for a wholesome meal.

Ingredients

Meat

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 cup bell peppers (mixed colors), chopped
  • 1 cup zucchini, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 teaspoons Italian seasoning
  • 2 tablespoons olive oil

Instructions 

  • Wash and chop all vegetables into bite-sized pieces.
  • Heat olive oil in a skillet; sauté onion and peppers for 5 minutes.
  • Add beef; cook until browned, about 6-7 minutes.
  • Stir in garlic and zucchini; cook for 3 minutes.
  • Add tomatoes and Italian seasoning; simmer for 10 minutes.

Notes

Feel free to add cheese or serve over rice for extra flavor.
