Delight in these rich, fudgy brownies made with roasted sweet potato for a healthy twist on a classic treat.

Instructions
Preheat oven to 400°F (200°C). Roast sweet potato for 45-60 minutes, cool, peel, and measure 1 cup (250g) mash. Blend until smooth.
Reduce oven temperature to 350°F (175°C). Mix almond butter, maple syrup, and vanilla until glossy.
Add cocoa powder, collagen, baking soda, and salt; pulse until combined. Fold in most chocolate chips.
Line an 8x8 inch pan with parchment, spread batter, and top with remaining chocolate chips. Bake for 28-30 minutes.
Cool in pan for 30 minutes, refrigerate for at least 1 hour before slicing.
Notes
For best texture, refrigerate before slicing.
