Fresh Fruit Tart with Vanilla Mascarpone Cream

A delightful tart featuring a buttery crust filled with creamy mascarpone and topped with fresh fruit, perfect for a special occasion or a sweet treat.

Ingredients

Dough

  • 2 tbsp cold heavy cream
  • 1 large egg
  • ½ tsp pure vanilla extract
  • 1.5 cups all-purpose flour (spooned & leveled)
  • ½ cup confectioners’ sugar
  • ¼ tsp salt
  • ½ cup unsalted butter, very cold and cubed
  • ½ cup cold heavy cream
  • 8 ounces mascarpone cheese, cold
  • ¼ cup confectioners’ sugar
  • ½ tsp pure vanilla extract
  • Seeds from ½ vanilla bean (or an extra teaspoon of vanilla extract) vanilla bean seeds

Instructions 

  • Whisk heavy cream, egg, and vanilla; set aside.
  • Mix flour, sugar, and salt; cut in butter until crumbly. Add cream mixture and combine to form dough.
  • Shape dough into a disc, wrap, and chill for 1 hour.
  • Roll out dough, fit into tart pan, and refrigerate 10 minutes. Bake at 400°F for 12 min, then lower to 350°F, remove weights, and bake 7-10 min until golden. Cool.
  • Whip heavy cream until stiff peaks. Beat mascarpone, sugar, vanilla, and seeds until just combined. Fold in whipped cream, spread in crust, and chill.
  • Top with fresh fruit, optionally glaze with preserves, and serve.

Notes

Use ripe, fresh fruit for the best flavor and presentation.
