A delightful dessert featuring a crisp tart shell filled with creamy vanilla custard and topped with fresh, glossy fruits.

Ingredients

Dough

  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 egg yolk egg yolk
  • 2-4 tablespoons ice water

Custard

  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 1 vanilla bean, split and scraped vanilla bean
  • 3 tablespoons cornstarch
  • 4 egg yolks egg yolks
  • 2 tablespoons unsalted butter

Topping

  • Assorted pieces fresh fruits (berries, kiwi, mango, etc.)
  • 1/2 cup apricot glaze or jelly

Instructions 

  • Mix flour, sugar, and salt; cut in butter until coarse.
  • Add egg yolk and ice water; form dough, chill 30 min.
  • Roll dough, fit into tart pan, pre-bake at 375°F (190°C) for 15-20 min, then cool.
  • Heat milk with vanilla bean, infuse 10 min, then whisk with sugar, cornstarch, yolks; cook until thick.
  • Stir in butter, cool slightly, pour into shell, top with fruits, brush with glaze, chill before serving.

Notes

Use ripe fruits for best flavor and appearance.
