Instructions
Mix flour, sugar, and salt; cut in butter until coarse.
Add egg yolk and ice water; form dough, chill 30 min.
Roll dough, fit into tart pan, pre-bake at 375°F (190°C) for 15-20 min, then cool.
Heat milk with vanilla bean, infuse 10 min, then whisk with sugar, cornstarch, yolks; cook until thick.
Stir in butter, cool slightly, pour into shell, top with fruits, brush with glaze, chill before serving.
Notes
Use ripe fruits for best flavor and appearance.
