Ingredients
Dough
1 1/3cupsall-purpose flour
1/2cupconfectioners’ sugar
1/4teaspoonsalt
1/2cupunsalted butter(cold, cut into pieces)
1largeegg
Custard Filling
1 1/2cupswhole milk
1/2cupheavy cream
1/2cupsugar(divided)
3tablespoonscornstarch
1/2teaspoonvanilla extract

Instructions
Prepare the crust by mixing flour, confectioners’ sugar, salt, and cold butter until crumbly. Press into tart pan and bake at 350°F (175°C) for 15 minutes.
Whisk egg yolks, sugar, cornstarch, vanilla, and milk in a saucepan. Cook over medium heat until thickened, then cool.
Fill the cooled crust with custard and chill for at least 30 minutes.
Arrange fresh fruit on top of the custard. Brush with apricot preserves if desired.
