Ingredients

Dough

  • 1 1/3 cups all-purpose flour
  • 1/2 cup confectioners’ sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (cold, cut into pieces)
  • 1 large egg

Custard Filling

  • 1 1/2 cups whole milk
  • 1/2 cup heavy cream
  • 1/2 cup sugar (divided)
  • 3 tablespoons cornstarch
  • 1/2 teaspoon vanilla extract

Fruit Topping

Instructions 

  • Prepare the crust by mixing flour, confectioners’ sugar, salt, and cold butter until crumbly. Press into tart pan and bake at 350°F (175°C) for 15 minutes.
  • Whisk egg yolks, sugar, cornstarch, vanilla, and milk in a saucepan. Cook over medium heat until thickened, then cool.
  • Fill the cooled crust with custard and chill for at least 30 minutes.
  • Arrange fresh fruit on top of the custard. Brush with apricot preserves if desired.
  • Serve chilled and enjoy your fresh fruit tart!
