2whole orangesoranges(for boiling and pureeing)
⅔cuphoney
3largeeggs
½teaspoonbaking soda
1cupground pistachios
1teaspoonvanilla extract
2tablespoonshoney(for glaze)
½cupfresh orange juice(for glaze)
Instructions
Simmer whole oranges in water for 1 hour, then puree until smooth.
Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
Mix orange puree, honey, eggs, almond flour, pistachios, baking soda, and vanilla until smooth.
Pour batter into pan and bake for 60 minutes. Cover if browning too quickly.
Simmer honey and orange juice until reduced by half. Brush over warm cake and cool before serving.
