A delicious gluten-free cake combining the bright flavors of orange and the nutty richness of pistachios, perfect for a special occasion or teatime treat.

Ingredients

  • 2 cups almond flour
  • 2 whole oranges oranges (for boiling and pureeing)
  • cup honey
  • 3 large eggs
  • ½ teaspoon baking soda
  • 1 cup ground pistachios
  • 1 teaspoon vanilla extract
  • 2 tablespoons honey (for glaze)
  • ½ cup fresh orange juice (for glaze)

Instructions 

  • Simmer whole oranges in water for 1 hour, then puree until smooth.
  • Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  • Mix orange puree, honey, eggs, almond flour, pistachios, baking soda, and vanilla until smooth.
  • Pour batter into pan and bake for 60 minutes. Cover if browning too quickly.
  • Simmer honey and orange juice until reduced by half. Brush over warm cake and cool before serving.

Notes

This cake is best enjoyed after cooling completely to set the flavors.
