A hearty and flavorful Finnish salmon soup featuring tender salmon, potatoes, carrots, and fresh dill in a creamy broth.

Ingredients

  • 1 lb salmon fillet, skin removed and cut into chunks
  • 4 cups fish or vegetable broth
  • 1.5 cups heavy cream
  • 4 medium potatoes, peeled and diced
  • 2 medium carrots, peeled and sliced
  • 1 small leek, thinly sliced
  • 1 small onion, finely chopped
  • 2 tbsp butter
  • 1 tsp salt (or to taste)
  • 0.5 tsp black pepper
  • 0.5 tsp allspice (optional, for extra warmth)
  • 1 bay leaf bay leaf
  • 0.5 cup fresh dill, chopped
  • 2 tbsp lemon juice

Instructions 

  • In a large pot, melt butter and sauté onion and leek until soft.
  • Add broth, potatoes, carrots, bay leaf, salt, pepper, and allspice; simmer until vegetables are tender (~15 mins).
  • Gently add salmon chunks; cook until opaque (~5 mins).
  • Lower heat, stir in heavy cream, and heat through without boiling (~2-3 mins).
  • Remove bay leaf, stir in dill and lemon juice, then serve warm.

Notes

For best flavor, use fresh dill and high-quality salmon.
