A creamy and flavorful pasta dish featuring tender chicken, sun-dried tomatoes, and fresh spinach, perfect for a comforting meal.

Ingredients

Protein

  • 1 pound chicken breast
  • 1 tbsp oil
  • 3 cloves garlic (minced)
  • 1/2 tsp oregano
  • 1/2 tsp onion powder
  • 1/2 tsp basil
  • 1/4 tsp salt
  • to taste cracked pepper or ground pepper
  • 1 pound fettuccini or pasta of choice
  • 1 cup grated parmigiano reggiano or fresh parmesan
  • 3 cloves garlic (minced)
  • 3 tbsp chopped sun-dried tomatoes
  • 1 cup baby spinach
  • 1/2 cup heavy cream
  • 1/2 cup milk
  • 1 tbsp cream cheese
  • 2 tbsp butter
  • 1 tbsp crushed red pepper flakes (more or less to taste)
  • 1/4 tsp salt (more as needed)

Garnish

  • to taste fresh cracked or ground pepper
  • as needed Italian parsley to garnish

Instructions 

  • Cook chicken, season, and set aside.
  • Melt butter, add garlic, then pour in cream and milk, simmer.
  • Add cheese, cream cheese, sun-dried tomatoes, and chicken; simmer until thickened.
  • Cook pasta until al dente, then toss with sauce, adding reserved pasta water as needed.
  • Stir in spinach, garnish with parsley and pepper, serve warm.

Notes

Use fresh parmesan for best flavor and adjust red pepper flakes to your spice preference.
