Start your day with these quick and cheesy breakfast quesadillas, packed with eggs, cheese, and optional veggies for a satisfying meal.

Ingredients

Eggs and Dairy

  • 4 large eggs
  • 2 tablespoons milk or water
  • 1 cup shredded cheddar cheese

Vegetables and Herbs (Optional)

  • 2 tablespoons chopped onions (optional)
  • 2 tablespoons diced bell peppers (optional)

Other

  • 1 tablespoon olive oil or butter

Instructions 

  • Whisk eggs with milk, salt, and pepper until just combined.
  • Cook eggs gently in a skillet with half the oil until soft; set aside.
  • Heat skillet, add remaining oil, place tortilla, sprinkle cheese, add eggs and optional veggies, then top with cheese.
  • Fold tortilla, cook 1-2 minutes per side until golden and cheese melts.
  • Cut into wedges and serve warm.

Notes

Feel free to add your favorite vegetables or herbs for extra flavor.
