Start your day with these quick and cheesy breakfast quesadillas, packed with eggs, cheese, and optional veggies for a satisfying meal.
Ingredients

milk or water

shredded cheddar cheese
Vegetables and Herbs (Optional)

Instructions
Whisk eggs with milk, salt, and pepper until just combined.
Cook eggs gently in a skillet with half the oil until soft; set aside.
Heat skillet, add remaining oil, place tortilla, sprinkle cheese, add eggs and optional veggies, then top with cheese.
Fold tortilla, cook 1-2 minutes per side until golden and cheese melts.
Cut into wedges and serve warm.
