Instructions
Preheat oven to 350°F (175°C) and grease a 2-quart baking dish.
Spread hash browns in the dish, then layer with ham, green onions, and cheese.
Whisk together eggs, evaporated milk, pepper, salt, and mustard in a bowl.
Pour the egg mixture over the potato and ham layers.
Bake uncovered for 50–60 minutes until a knife comes out clean.
