Instructions
Prep all vegetables and rinse beans.
Sauté onion, carrots, and celery in oil until translucent and browned.
Add garlic, tomato paste, spices, and cook briefly.
Add squash, potatoes, broth, tomatoes, and bay leaf; simmer until tender.
Stir in beans, corn, greens, and grains; cook until heated through. Finish with lemon juice and season to taste.
Notes
For a creamier texture, mash some vegetables before serving. Adjust seasoning as needed.
