These vegan energy balls are a delicious and nutritious snack, packed with blueberries, cashews, and cacao for a quick energy boost.

Ingredients

Dried Blueberries

  • ½ cup raw cashews
  • ½ cup quick cooking oats
  • ¾ cup dried blueberries
  • ¼ cup Medjool Dates
  • 1 tbsp cacao powder
  • ½ tsp vanilla extract
  • Pinch salt

Instructions 

  • Combine all ingredients in a food processor until sticky.
  • Refrigerate mixture for 30 minutes.
  • Roll mixture into balls and place on a lined sheet.
  • Refrigerate for another 30 minutes or freeze for up to 1 month.
