Enjoy a nutritious and delicious egg wrap filled with fresh avocado, arugula, and feta cheese for a quick meal.

Ingredients

Eggs and Dairy

  • 2 pieces eggs
  • 1 teaspoon water
  • 1 teaspoon all-purpose flour
  • 1 tablespoon feta cheese

Vegetables and Oils

  • 2 teaspoons olive oil
  • ½ avocado avocado
  • 1 teaspoon lemon juice
  • ¼ teaspoon garlic powder

Fresh Greens and Vegetables

  • 1 cup arugula
  • 1 small tomato (sliced)

Instructions 

  • Whisk eggs, water, flour, salt, and pepper until smooth.
  • Heat olive oil in a pan, pour egg mixture, cook until set, then flip and cool.
  • Mash avocado with garlic, lemon juice, salt, and pepper to make spread.
  • Spread avocado on egg wrap, top with arugula, tomato slices, and feta, then roll and slice.
