Ingredients

Vegetables and Oils

  • 2 tablespoons Extra-Virgin Olive Oil
  • 1 medium Onion
  • 3 cloves Garlic (minced)

Meat and Grains

  • 1 pound Lean Ground Beef
  • 1 1/2 cups Cooked Brown Rice
  • 1 can (14.5 oz) Diced Tomatoes
  • 2 tablespoons Tomato Paste

Spices and Seasonings

  • 1 teaspoon Dried Oregano
  • 1 teaspoon Paprika
  • to taste Kosher Salt and Black Pepper

Bell Peppers

  • 7 large Bell Peppers (assorted colors)

Cheese

  • 1 cup Shredded Cheddar Jack Cheese

Fresh Herbs

  • 2 tablespoons tablespoons Fresh Parsley

Instructions 

  • Preheat oven to 375°F and arrange peppers cut side up in a baking dish.
  • Cook onion and garlic in olive oil until translucent, then add beef and cook until browned. Stir in rice, tomatoes, tomato paste, oregano, and paprika; simmer briefly.
  • Stuff peppers with beef mixture, bake for 10-12 minutes, then top with cheese and bake until melted. Garnish with parsley before serving.

Notes

For a vegetarian version, substitute the beef with beans or vegetables.
