Instructions
Preheat oven to 375°F and arrange peppers cut side up in a baking dish.
Cook onion and garlic in olive oil until translucent, then add beef and cook until browned. Stir in rice, tomatoes, tomato paste, oregano, and paprika; simmer briefly.
Stuff peppers with beef mixture, bake for 10-12 minutes, then top with cheese and bake until melted. Garnish with parsley before serving.
