Instructions
Cook ground beef until browned, then drain.
Preheat oven to 400°F (200°C). Mix onion, bell pepper, quinoa, and taco seasoning in a baking dish.
Whisk together beef broth, green chilies, tomato paste, and olive oil; pour over mixture.
Add cooked beef, black beans, and corn; stir to combine. Cover and bake 45-50 minutes.
Remove from oven, sprinkle with cheese, and bake 5-10 minutes until melted and golden.
Notes
For extra flavor, top with fresh cilantro, green onion, or avocado before serving.
