A flavorful and hearty casserole combining quinoa, beef, and southwestern spices, perfect for a quick weeknight dinner.

Ingredients

Meat

  • 1 pound extra lean ground beef
  • 0.5 cup finely diced onion
  • 1 red bell pepper diced red bell pepper
  • 1 cup dry quinoa, rinsed
  • 3 tablespoons taco seasoning (homemade or store-bought)
  • 1 cup frozen corn kernels
  • 14 ounce can of low sodium black beans, drained and rinsed
  • 2 cups reduced sodium beef broth
  • 1 can (4 ounces) mild green chilies
  • 1 tablespoon olive oil
  • 2 tablespoons tomato paste
  • 1.25 cups shredded Monterey Jack cheese

Instructions 

  • Cook ground beef until browned, then drain.
  • Preheat oven to 400°F (200°C). Mix onion, bell pepper, quinoa, and taco seasoning in a baking dish.
  • Whisk together beef broth, green chilies, tomato paste, and olive oil; pour over mixture.
  • Add cooked beef, black beans, and corn; stir to combine. Cover and bake 45-50 minutes.
  • Remove from oven, sprinkle with cheese, and bake 5-10 minutes until melted and golden.

Notes

For extra flavor, top with fresh cilantro, green onion, or avocado before serving.
