A quick and delicious mango pudding perfect for a refreshing treat. Made with ripe mangoes and simple ingredients, it's easy to prepare and delightfully creamy.

Ingredients

Fruits and liquids

  • 12 oz fully ripened and tender mangoes, peeled, pitted, and diced
  • 0.54 cups coconut milk (full fat) or substitute with evaporated milk, heavy cream, or evaporated coconut milk
  • 4 tbsp evaporated milk or coconut milk for a vegan version

Gelatin and sugar

  • 2 tbsp cold water
  • 1.5 tbsp gelatin or 1.5 tsp agar agar powder for a vegan version
  • 1.5 tbsp white granulated sugar

Instructions 

  • Blend mangoes until smooth, then strain if desired.
  • Mix cold water with gelatin and let bloom, then add sugar, coconut milk, and mango puree. Whisk until smooth.
  • Warm the mixture gently over low heat until gelatin dissolves, do not boil.
  • Pour into molds or bowls and refrigerate for at least 6 hours until set.
  • Serve chilled with a drizzle of evaporated or coconut milk.

Notes

Use ripe mangoes for best flavor and adjust sweetness as needed.
