A quick and delicious mango pudding perfect for a refreshing treat. Made with ripe mangoes and gelatin or agar agar, it's easy to prepare and delightfully smooth.

  • 12 oz fully ripened and tender mangoes, peeled, pitted, and diced
  • 2 tbsp cold water
  • 1.5 tbsp gelatin or agar agar powder (for vegan version)
  • 1.5 tbsp white granulated sugar
  • 0.54 cups coconut milk (full fat) (or substitute with evaporated milk, heavy cream, or evaporated coconut milk)
  • 4 tbsp evaporated milk or coconut milk (for serving)

Instructions 

  • Blend mangoes until smooth, then strain for extra smoothness.
  • Mix cold water with gelatin and let bloom; then add sugar, coconut milk, and mango puree. Whisk until combined.
  • Warm the mixture gently over low heat until gelatin dissolves; do not boil.
  • Pour into molds or bowls and refrigerate for at least 6 hours until set.
  • Serve chilled with a drizzle of evaporated or coconut milk.

Notes

Use ripe mangoes for best flavor and adjust sweetness as needed.
