12ozfully ripened and tender mangoes, peeled, pitted, and diced
2tbspcold water
1.5tbspgelatin or agar agar powder(for vegan version)
1.5tbspwhite granulated sugar
0.54cupscoconut milk (full fat)(or substitute with evaporated milk, heavy cream, or evaporated coconut milk)
4tbspevaporated milk or coconut milk(for serving)
Instructions
Blend mangoes until smooth, then strain for extra smoothness.
Mix cold water with gelatin and let bloom; then add sugar, coconut milk, and mango puree. Whisk until combined.
Warm the mixture gently over low heat until gelatin dissolves; do not boil.
Pour into molds or bowls and refrigerate for at least 6 hours until set.
Serve chilled with a drizzle of evaporated or coconut milk.

Use ripe mangoes for best flavor and adjust sweetness as needed.
