Ingredients

Meat

  • 1 pound Lean ground turkey

Vegetables

  • 1 medium Onion, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 tablespoon Italian seasoning
  • 1 cup Bell peppers, diced
  • 1 medium Zucchini, chopped
  • 1 cup Carrots, shredded
  • 2 cups Fresh spinach
  • 1 cup Shredded mozzarella cheese
  • 1 cup Tomato sauce
  • 2 tablespoons Olive oil (For sautéing)

Instructions 

  • Preheat oven to 375°F (190°C). Sauté onion and garlic in olive oil until fragrant.
  • Add ground turkey and cook until browned. Mix in Italian seasoning, then combine with diced bell peppers, zucchini, and shredded carrots.
  • Spread the mixture in a baking dish, top with spinach, tomato sauce, and shredded mozzarella.
  • Bake for 25-30 minutes until cheese is melted and bubbly.
