A flavorful and hearty salmon soup perfect for a quick, nutritious meal.

Ingredients

Oil

  • 4 tbsp extra virgin olive oil

Vegetables

  • 4 green onions green onions, (chopped)
  • 0.5 green bell pepper green bell pepper, (chopped)
  • 4 cloves garlic cloves, (minced)
  • 1 oz fresh dill, (divided, chopped)

Broth and Potatoes

  • 5 cups low-sodium chicken broth
  • 1 lb gold potatoes, (thinly sliced into rounds)
  • 1 carrot carrot, (thinly sliced into rounds)

Spices and Seasonings

  • 1 tsp dry oregano
  • 0.75 tsp ground coriander
  • 0.5 tsp ground cumin

Salt and Pepper

  • to taste Kosher salt and black pepper

Salmon

  • 1 lb salmon fillet, (no skin, cut into large chunks)

Citrus

  • 1 lemon zest and juice of 1 lemon

Instructions 

  • Heat olive oil in a large pot, cook green onions, bell pepper, and garlic until fragrant (~3 min). Add dill and stir for 30 sec.
  • Add broth, potatoes, carrots, spices, salt, and pepper. Bring to boil, then simmer 5-6 min until tender.
  • Season salmon with salt, add to soup, cook 3-5 min until flaky and cooked through.
  • Stir in lemon zest, juice, and remaining dill. Serve hot with crusty bread.

Notes

Use fresh dill for best flavor and a mandolin slicer for even potato and carrot slices.
