Broth and Potatoes

gold potatoes, (thinly sliced into rounds)

Salmon

salmon fillet, (no skin, cut into large chunks)
Citrus

zest and juice of 1 lemon
Instructions
Heat olive oil in a large pot, cook green onions, bell pepper, and garlic until fragrant (~3 min). Add dill and stir for 30 sec.
Add broth, potatoes, carrots, spices, salt, and pepper. Bring to boil, then simmer 5-6 min until tender.
Season salmon with salt, add to soup, cook 3-5 min until flaky and cooked through.
Stir in lemon zest, juice, and remaining dill. Serve hot with crusty bread.
Notes
Use fresh dill for best flavor and a mandolin slicer for even potato and carrot slices.
