Instructions
Preheat oven to 425°F (218°C) and line a muffin pan.
Whisk dry ingredients in a large bowl.
Whisk wet ingredients in a medium bowl until smooth.
Fold wet into dry ingredients until combined.
Fill muffin cups and bake for 5 minutes at 425°F, then reduce to 350°F and bake for 16-17 minutes.
Cool in the pan for 5 minutes, then transfer to a wire rack.
Notes
For extra flavor, add chocolate chips or nuts to the batter.
