Deliciously moist and spiced, these easy pumpkin muffins are perfect for fall baking.

Ingredients

Dry Ingredients

  • 1.75 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1.5 teaspoons ground cinnamon
  • 1.5 teaspoons pumpkin pie spice
  • 0.25 teaspoon ground ginger
  • 0.5 teaspoon salt

Wet Ingredients

  • 0.5 cup vegetable oil ((or melted coconut oil))
  • 0.5 cup granulated sugar
  • 0.5 cup packed light or dark brown sugar
  • 1.5 cups canned pumpkin puree
  • 2 large eggs
  • 0.25 cup milk ((dairy or nondairy))

Instructions 

  • Preheat oven to 425°F (218°C) and line a muffin pan.
  • Whisk dry ingredients in a large bowl.
  • Whisk wet ingredients in a medium bowl until smooth.
  • Fold wet into dry ingredients until combined.
  • Fill muffin cups and bake for 5 minutes at 425°F, then reduce to 350°F and bake for 16-17 minutes.
  • Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

For extra flavor, add chocolate chips or nuts to the batter.
