  • 120 ml vegetable oil
  • 2 tsp baking powder
  • 240 g all-purpose flour
  • 200 g sugar
  • 1 can pumpkin puree (not pumpkin pie filling)
  • 2 tsp pumpkin spice (or cinnamon)
  • 2 tsp vanilla extract
  • 1/2 tsp salt
  • 90 g chocolate chips

Instructions 

  • Preheat oven to 350°F (175°C) and prepare a loaf pan.
  • Whisk together eggs, oil, vanilla, and pumpkin until smooth.
  • Stir in flour, sugar, baking powder, pumpkin spice, and salt until just combined.
  • Fold in chocolate chips evenly.
  • Pour batter into pan and bake for about 60 minutes.
  • Cool for 10 minutes, then transfer to a wire rack.

Cover with foil if the top browns too quickly.
