Easy Oatmeal Banana Bread

A moist and flavorful banana bread packed with oats and walnuts, perfect for a quick breakfast or snack.

Ingredients

Dry ingredients

  • 1 cup old fashioned oats
  • 1 1/4 cups all purpose flour
  • 1/2 cup light brown sugar, packed
  • 1/2 tsp kosher salt
  • 1/2 tsp baking soda
  • 1/4 tsp baking powder
  • 1/2 tsp ground cinnamon

Wet ingredients

  • 3 large ripe bananas, cut into chunks (processed until smooth)
  • 2 large eggs
  • 1 tsp pure vanilla extract
  • 3 TBSP cooking oil (corn, canola, etc)
  • 1/3 cup chopped walnuts (optional)

Instructions 

  • Preheat oven to 350°F (175°C). Spray a 9" loaf pan with cooking spray.
  • Process oats until half their size. Mix dry ingredients in a bowl.
  • Blend bananas until smooth, then add eggs, vanilla, and oil. Mix well.
  • Combine wet and dry mixtures, fold in walnuts if using. Pour into pan.
  • Bake for 45-50 minutes until a tester comes out clean. Cool before slicing.

Notes

For extra flavor, let the bread sit overnight to develop richer taste.
