A moist and flavorful banana bread packed with oats and walnuts, perfect for a quick breakfast or snack.
Ingredients
Dry ingredients

old fashioned oats

all purpose flour
1/2

light brown sugar, packed
1/2

kosher salt
1/2
tsp
baking soda
1/4
tsp
baking powder

ground cinnamon
Wet ingredients

ripe bananas, cut into chunks
(processed until smooth)

eggs

pure vanilla extract

cooking oil (corn, canola, etc)

chopped walnuts (optional)
Instructions
Preheat oven to 350°F (175°C). Spray a 9" loaf pan with cooking spray.
Process oats until half their size. Mix dry ingredients in a bowl.
Blend bananas until smooth, then add eggs, vanilla, and oil. Mix well.
Combine wet and dry mixtures, fold in walnuts if using. Pour into pan.
Bake for 45-50 minutes until a tester comes out clean. Cool before slicing.
Notes
For extra flavor, let the bread sit overnight to develop richer taste.
