A quick and flavorful chicken dish infused with fresh lemon and garlic, perfect for a weeknight dinner.

Ingredients

Protein

  • 4 pieces chicken thighs or breasts
  • 1/4 cup fresh lemon juice
  • 3 cloves garlic cloves (minced)
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • to taste salt and black pepper salt and black pepper
  • 1/2 cup chicken broth
  • 1 tablespoon butter (cold)
  • 2 tablespoons fresh parsley (chopped)
  • 1 teaspoon lemon zest

Instructions 

  • Whisk lemon juice, garlic, oregano, olive oil, salt, and pepper. Marinate chicken for 15–20 minutes.
  • Heat oil in a skillet over medium heat. Cook chicken skin-side down for 5–6 minutes until golden, then flip and cook 4–5 minutes.
  • Add chicken broth, deglaze, then simmer for 2–3 minutes. Stir in butter until melted.
  • Serve chicken with sauce, garnished with parsley and lemon zest.

Notes

For extra flavor, let the chicken marinate longer or add a splash of white wine during deglazing.
