A flavorful and hearty beef mince curry that's quick to prepare and perfect for weeknight dinners.

Ingredients

Meat

  • 450 g extra lean beef mince

Vegetables

  • 1 large onion, chopped finely
  • 1 large carrot, finely chopped
  • 1 stalk celery, finely chopped
  • 3 cloves garlic, crushed
  • 1 heaped teaspoon fresh grated ginger

Spices & Condiments

  • 2 teaspoons cumin seeds
  • 2 teaspoons ground coriander
  • 1 teaspoon deggi mirch Chilli Powder
  • 1 teaspoon garam masala
  • 1 teaspoon turmeric

Other

  • 1 cup frozen peas
  • 4 tablespoons tomato paste
  • 2 cups beef stock (use 1 cup for instant pot)
  • to taste salt and black pepper
  • as needed freshly chopped coriander to serve
  • as needed cooking oil spray (I used avocado)

Instructions 

  • Spray a frying pan with oil, cook onion, garlic, carrot, celery, and ginger for 5 mins.
  • Add beef and cook until browned, then stir in spices and tomato paste.
  • Add stock, simmer for 30 mins until thickened, then stir in peas and season.
  • Serve topped with chopped coriander and rice.

Notes

Use fresh ingredients for best flavor. Adjust seasoning to taste.
