A quick and flavorful stir fry combining lean ground turkey with fresh vegetables and a savory sauce, served over rice.

Ingredients

  • 1 tbsp olive oil
  • 1 medium sweet onion, finely diced
  • 2 sticks celery, finely diced
  • 1 lb ground turkey (lean)
  • 3 cloves garlic, minced
  • 1 red bell pepper diced
  • 1 medium zucchini, small-diced
  • 1 tsp fresh ginger, grated
  • 1/4 cup low-sodium soy sauce
  • 1.5 tbsp honey
  • 2 tbsp hot sauce (Sriracha, Frank's, or similar)
  • 1 tbsp rice vinegar
  • 1.5 tsp toasted sesame oil
  • 1/4 cup filtered water
  • 1 tbsp cornstarch
  • 1 tbsp toasted sesame seeds (plus more for garnish)
  • 2 cups cooked rice (white, brown, or cauliflower rice)
  • 3 green onions thinly sliced (green parts only)

Instructions 

  • Heat olive oil in a large skillet over medium-high heat. Add diced onion, celery, and garlic; cook until fragrant.
  • Add ground turkey and cook until browned, breaking it apart with a spatula.
  • Stir in bell pepper, zucchini, ginger, soy sauce, honey, hot sauce, and rice vinegar; cook for 3-4 minutes.
  • Mix water and cornstarch, then add to the skillet; cook until sauce thickens.
  • Serve stir fry over cooked rice, garnished with toasted sesame seeds and sliced green onions.

Notes

Feel free to customize the spice level with more hot sauce or additional vegetables.
