Instructions
Heat olive oil in a large skillet over medium-high heat. Add diced onion, celery, and garlic; cook until fragrant.
Add ground turkey and cook until browned, breaking it apart with a spatula.
Stir in bell pepper, zucchini, ginger, soy sauce, honey, hot sauce, and rice vinegar; cook for 3-4 minutes.
Mix water and cornstarch, then add to the skillet; cook until sauce thickens.
Serve stir fry over cooked rice, garnished with toasted sesame seeds and sliced green onions.
Notes
Feel free to customize the spice level with more hot sauce or additional vegetables.
