A light and zesty lemon cake made with Greek yogurt, perfect for a quick dessert or snack.

Ingredients

Dry ingredients

  • 1.5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 0.25 teaspoon salt

Wet ingredients

  • 0.75 cup sugar
  • 0.5 cup olive oil ((or any neutral oil))
  • 1 cup plain Greek yogurt
  • 3 large eggs
  • Zest of 2 lemons lemon zest
  • 3 tablespoons fresh lemon juice
  • 1 teaspoon vanilla extract

Lemon glaze

  • 0.5 cup powdered sugar
  • 1-2 tablespoons lemon juice (for glaze)

Instructions 

  • Preheat oven to 350°F (175°C) and line a loaf pan with parchment paper.
  • Mix dry ingredients; in another bowl, combine wet ingredients until smooth.
  • Gradually add dry to wet, mixing gently until combined.
  • Pour batter into pan, bake for 40-45 minutes, then cool.
  • Whisk powdered sugar with lemon juice for glaze, drizzle over cooled cake.

Notes

Allow the cake to cool completely before glazing for best results.
