A quick and flavorful chicken dish with a creamy mushroom sauce, made without heavy cream for a lighter meal.

Ingredients

Main ingredients

  • 2 tablespoons olive oil (divided, avocado oil)
  • 1.5 pounds chicken breasts (boneless and skinless)
  • 3 cloves garlic (crushed)
  • 8 ounces button mushrooms (halved)
  • 1 1/4 cup chicken broth
  • 1/2 teaspoon cornstarch
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 ounces Light cream cheese (softened)
  • 1 tablespoon fresh chopped curly parsley

Instructions 

  • Heat 1 tablespoon of olive oil in a pan over medium-high heat.
  • Cook chicken until golden-brown, about 5 minutes per side; set aside.
  • Cook mushrooms in remaining oil until golden; add garlic and sauté.
  • Mix cornstarch with water, add chicken broth and cook until bubbling; stir in cream cheese until smooth.
  • Return chicken to pan, spoon sauce over, and garnish with parsley.

Notes

For a richer flavor, use fresh herbs and high-quality chicken broth.
