Enjoy a vegan-friendly, deliciously thick and chewy cookie inspired by Levain Bakery's famous treat, made simple at home.

Ingredients

Dried ingredients

  • 2 tbsp coconut sugar
  • 2.5 tbsp almond butter
  • 1 tbsp unsweetened apple sauce
  • 1/4 tsp vanilla
  • 2 tbsp oat flour
  • 2 tbsp almond flour
  • 1/8 tsp baking soda
  • 1/8 tsp salt
  • 3 tbsp dairy free chocolate chips ((more to taste))

Instructions 

  • Preheat oven to 350F (175C).
  • Mix coconut sugar, almond butter, apple sauce, and vanilla until smooth.
  • Sift in oat flour, almond flour, baking soda, and salt; fold into wet ingredients to form a sticky dough.
  • Fold in chocolate chips generously.
  • Shape into tall cookies and bake for 15-20 minutes.

Notes

For extra height, chill the dough before shaping.
