Enjoy a vegan-friendly, deliciously thick and chewy cookie inspired by Levain Bakery's famous treat, made simple at home.

Instructions
Preheat oven to 350F (175C).
Mix coconut sugar, almond butter, apple sauce, and vanilla until smooth.
Sift in oat flour, almond flour, baking soda, and salt; fold into wet ingredients to form a sticky dough.
Fold in chocolate chips generously.
Shape into tall cookies and bake for 15-20 minutes.
Notes
For extra height, chill the dough before shaping.
