A quick and flavorful chicken stir fry with colorful vegetables and a savory sauce, perfect for a weeknight dinner.

Ingredients

Protein

  • 3 pieces boneless chicken breasts (diced into 1 inch pieces)
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 tbsp olive oil (divided)
  • 2 cups broccoli florets (diced into bite size pieces)
  • 1/2 Yellow Bell Pepper Yellow Bell Pepper (cut into 1 inch pieces)
  • 1/2 red bell pepper Red Bell Pepper (cut into 1 inch pieces)
  • 1/2 cup carrots (shredded)
  • 1/2 tsp ground ginger
  • 2 tsp minced garlic
  • 2 tbsp sesame seeds
  • 1 tbsp cornstarch
  • 1/4 cup chicken broth
  • 1/4 cup soy sauce
  • 2 tbsp honey

Instructions 

  • Whisk cornstarch, chicken broth, soy sauce, and honey to make the sauce. Set aside.
  • Cook diced chicken in 1 tbsp olive oil until browned, then remove from skillet.
  • Stir-fry vegetables in remaining oil until tender-crisp. Add ginger and garlic, cook 1-2 minutes.
  • Return chicken to skillet, pour sauce over, and cook until thickened, about 1 minute.
  • Sprinkle sesame seeds on top and serve hot over rice if desired.

Notes

For extra flavor, add a splash of sesame oil or chopped green onions.
