Ingredients

Meat

  • 1 lb Ground beef (Choose lean or 80/20 for juiciness)

Vegetables

  • 2 medium Zucchini (Sliced)
  • 1 medium Onion (Diced)
  • 2 cloves Garlic (Minced)

Oils & Seasonings

  • 1 tbsp Olive oil (Extra virgin for flavor)
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 1 tsp Dried oregano
  • 1/2 tsp Red pepper flakes (Optional)

Additional

  • 1 cup Cherry tomatoes (Halved)
  • 1/4 cup Fresh parsley (Chopped)
  • 1/4 cup Grated Parmesan

Instructions 

  • Heat olive oil in a skillet over medium heat. Add diced onion and minced garlic; cook until fragrant.
  • Add ground beef; cook until browned and cooked through.
  • Stir in sliced zucchini, cherry tomatoes, salt, pepper, oregano, and red pepper flakes; cook until zucchini is tender.
  • Remove from heat and sprinkle with chopped parsley and grated Parmesan before serving.

Notes

Use lean beef for a healthier option, and feel free to add more herbs for extra flavor.
