Easy Beef Stroganoff with Rice

A quick and creamy beef stroganoff served over fluffy rice, perfect for a comforting weeknight dinner.

Ingredients

Meat

  • 1 lb sirloin steak (thinly sliced)
  • Salt and pepper to taste Salt and pepper

Vegetables and Oil

  • 4 tablespoons vegetable oil (divided)
  • 1 medium onion (finely chopped)
  • 8 oz baby bella mushrooms (sliced)
  • 2 cloves garlic (minced)

Sauce and Thickener

  • 2 tablespoons all-purpose flour
  • 1 cup beef broth
  • 1 cup sour cream or Greek yogurt
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard

Rice

  • 2 cups rice (cooked as per package instructions)

Instructions 

  • Cook rice according to package instructions and set aside.
  • Heat 2 tablespoons of oil in a large skillet over medium-high heat. Sear the sliced steak until browned, then remove and set aside.
  • Add remaining oil, sauté onions and mushrooms until tender. Stir in garlic and cook for 1 minute.
  • Sprinkle flour over vegetables, stir well, then pour in beef broth. Simmer until slightly thickened.
  • Return beef to skillet, stir in sour cream, Worcestershire, and mustard. Cook until heated through.

Notes

Use full-fat sour cream for creamier texture.
