Enjoy these wholesome, no-bake carrot cake bars perfect for a healthy Easter treat. They're easy to make and packed with natural sweetness and flavor.

Ingredients

Base ingredients

  • 10 large medjool dates (pitted)
  • 0.5 cup raisins
  • 1 cup oats
  • 1 cup walnuts
  • 0.5 cup desiccated coconut
  • 0.5 cup grated carrot (from 1 medium carrot)
  • 1 unit orange zest (of 1 orange)
  • 2 tablespoons orange juice
  • 1.5 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 0.25 teaspoon sea salt

Optional toppings

  • to taste dairy-free white chocolate, melted (for drizzling)
  • handful chopped walnuts (for scattering on top)

Instructions 

  • Preheat oven to 180°C (350°F).
  • Combine all base ingredients in a food processor until mixture is soft and sticky. Add more orange juice if dry.
  • Press mixture into an 8-inch square baking tin and bake for 20 minutes. Cool and slice into bars.
  • Optional: drizzle with melted white chocolate and sprinkle chopped walnuts on top.
