A flavorful and spicy Thai-inspired noodle dish with chicken, fresh herbs, and a savory sauce.
Ingredients
Noodles
8ozwide rice noodles
2Tbspsesame oil (or canola)
2mediumshallots (chopped)
2mediumcarrots (thinly sliced)
1largechicken breast (or thighs, chopped)((or shrimp or tofu))
3clovesgarlic (minced)
0.5teaspoonfresh ginger (minced)
1mediumzucchini (thinly sliced)((or broccoli))
2mediumgreen onions (chopped)
1cupFresh basil (roughly chopped)
3tablespoonsoyster sauce
0.33cuplow sodium soy sauce
2teaspoonsfish sauce
2teaspoonsbrown sugar
2tablespoonswater
1teaspoonThai red chili paste (or sriracha or crushed red pepper flakes)(more or less, to taste)
Instructions
Cook noodles according to package instructions.
Mix sauce ingredients in a small bowl.
Heat 1 tbsp oil, cook shallots and carrots 2 min. Add chicken and cook through. Add garlic and ginger 10 sec. Add zucchini and green onion whites, cook 2 min.
Add noodles and sauce, toss, cook until heated. Stir in basil and serve garnished with green onion and chili sauce.
Notes
Adjust spice level to taste with extra chili or sriracha.
