Ingredients

Dry Ingredients

  • 1.5 cups all-purpose flour
  • 0.5 cups whole wheat flour
  • 0.5 cups cocoa powder
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 0.25 tsp salt

Wet Ingredients

  • 3 overripe bananas bananas (mashed)
  • 0.33 cups agave syrup
  • 1 egg egg (slightly beaten, room temperature)
  • 0.25 cups coconut oil (melted and slightly cooled)
  • 0.25 cups plain Greek yogurt (room temperature)
  • 0.75 cups semi-sweet chocolate chips

Instructions 

  • Preheat oven to 375°F (190°C). Grease a 12-cup muffin pan or line with liners.
  • Mix dry ingredients: flours, cocoa powder, baking powder, baking soda, and salt.
  • In a bowl, mash bananas, then whisk in agave syrup, egg, coconut oil, and Greek yogurt. Combine with dry ingredients and fold in chocolate chips.
  • Distribute batter evenly into muffin cups, about 3/4 full.
  • Bake for 14-16 minutes until a toothpick comes out clean. Cool before removing from pan.

Notes

Use ripe bananas for best flavor and sweetness.
