Sweeteners

  • 1 cup Granulated Sugar (Brown sugar can enhance flavor.)
  • 0.5 cup Brown Sugar (Can be substituted with coconut sugar.)

Wet Ingredients

  • 1 cup Vegetable Oil (Applesauce makes a healthier alternative.)
  • 4 large Eggs (For egg-free options, use flax eggs.)
  • 2 ts Vanilla Extract (Using pure vanilla is recommended.)

Vegetables

  • 2 cups Grated Carrots (Always opt for freshly grated carrots.)

Frosting & Toppings

Instructions 

  • Preheat oven to 350°F (175°C). Grease and flour your cake pan.
  • Mix dry ingredients in a bowl. In another, combine wet ingredients.
  • Gradually add dry to wet, then fold in grated carrots, nuts, and raisins.
  • Pour batter into the prepared pan and bake for 40 minutes.
  • Let cake cool, then spread cream cheese frosting on top.

Notes

For a healthier twist, substitute some flour with whole wheat and reduce sugar slightly.
