  • 1.25 tsp baking powder
  • 6 large eggs (at room temperature)
  • 1.25 cups white sugar
  • 2.75 cups almond meal (or ground almonds)

Instructions 

  • Preheat oven to 350°F (180°C). Grease a cake pan.
  • Wash oranges, then blend whole oranges (including rind) until smooth.
  • In a bowl, whisk eggs and sugar until combined. Add orange puree and mix well.
  • Fold in almond meal and baking powder until smooth.
  • Pour batter into prepared pan and bake for 60 minutes or until a skewer inserted comes out clean.
