This moist and flavorful banana bread combines the tanginess of Greek yogurt with ripe bananas, perfect for a cheerful breakfast or snack.

Ingredients

Dairy

  • 1 cup Plain Whole Milk Greek Yogurt (Adds moisture and tanginess; substitute with any unsweetened yogurt for a lighter texture.)
  • 3 medium Mashed Ripe Bananas (Yields about 1 cup; provides natural sweetness and moisture.)
  • 0.5 cup Unsalted Butter (Ensure richness and tenderness; for a dairy-free version, use coconut oil.)
  • 2 large Eggs (Contributes structure and moisture; can be replaced with flax eggs for vegan.)
  • 1 teaspoon Vanilla Extract (Enhances overall flavor; using fresh vanilla bean adds richer taste.)
  • 0.5 teaspoon Salt (Balances sweetness and amplifies all flavors; no substitutions needed.)
  • 1 teaspoon Baking Soda (Provides lift; baking powder may work but adjust quantity accordingly.)
  • 1 cup Brown Sugar (Adds delightful sweetness and moisture; feel free to substitute half with honey or coconut sugar.)
  • 1.5 cups All-Purpose Flour (Main structural component; integral for desired texture.)

Instructions

  • Preheat oven to 350°F (175°C). Grease a loaf pan.
  • In a bowl, mix mashed bananas, Greek yogurt, melted butter, eggs, vanilla, salt, and sugar until well combined.
  • In a separate bowl, whisk together flour and baking soda.
  • Gradually add dry ingredients to wet ingredients, mixing until just combined.
  • Pour batter into prepared loaf pan and bake for 50 minutes or until a toothpick inserted in the center comes out clean.
