Ingredients

Crust

  • 1 cup all-purpose flour
  • ½ cup unsweetened cocoa powder
  • ¾ cup granulated sugar
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup melted butter
  • 1 large egg
  • 1 tsp vanilla extract

Cheesecake Filling

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream

Raspberry Swirl

  • 1 cup fresh raspberries
  • ¼ cup sugar
  • 1 tbsp cornstarch
  • 1 tbsp water

Chocolate Ganache

  • ¾ cup heavy cream
  • ¾ cup semi-sweet chocolate chips

Toppings

  • Fresh raspberries (for garnish)
  • Mini chocolate chips or chocolate curls (for decoration)

Instructions 

  • Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment.
  • Mix crust ingredients, press into pan, and bake for 12–15 minutes. Cool slightly.
  • Prepare raspberry swirl by cooking raspberries and sugar, then add cornstarch mixture and simmer until thick. Cool.
  • Beat cream cheese with sugar, eggs, vanilla, and sour cream until smooth. Pour over crust, add raspberry swirl on top, and swirl lightly.
  • Bake for 35–40 minutes, cool completely, then refrigerate at least 3 hours. Make ganache by heating cream and pouring over chocolate, stirring until smooth. Spread ganache over chilled cheesecake and garnish with raspberries and chocolate curls.

Notes

Ensure cheesecake is fully cooled before adding ganache for best results.
