Ingredients
Crust
1cupall-purpose flour
½cupunsweetened cocoa powder
¾cupgranulated sugar
½tspbaking powder
¼tspsalt
½cupmelted butter
1largeegg
1tspvanilla extract
Cheesecake Filling
16ozcream cheese, softened
½cupgranulated sugar
2largeeggs
1tspvanilla extract
½cupsour cream
Raspberry Swirl
1cupfresh raspberries
¼cupsugar
1tbspcornstarch
1tbspwater
Chocolate Ganache
¾cupheavy cream
¾cupsemi-sweet chocolate chips
Toppings
Fresh raspberries(for garnish)
Mini chocolate chips or chocolate curls(for decoration)
Instructions
Preheat oven to 350°F (175°C). Line an 8×8 inch pan with parchment.
Mix crust ingredients, press into pan, and bake for 12–15 minutes. Cool slightly.
Prepare raspberry swirl by cooking raspberries and sugar, then add cornstarch mixture and simmer until thick. Cool.
Beat cream cheese with sugar, eggs, vanilla, and sour cream until smooth. Pour over crust, add raspberry swirl on top, and swirl lightly.
Bake for 35–40 minutes, cool completely, then refrigerate at least 3 hours. Make ganache by heating cream and pouring over chocolate, stirring until smooth. Spread ganache over chilled cheesecake and garnish with raspberries and chocolate curls.
