Instructions
Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
Mix dry ingredients in a large bowl; in another, whisk oil and eggs. Combine both mixtures.
Fold in shredded carrots and nuts, then pour batter into the dish.
Bake for 25-30 minutes; cool completely.
Mix cream cheese, powdered sugar, and vanilla; spread over cooled bars and cut into squares.
Notes
