Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp ground ginger
  • ½ tsp salt

Wet Ingredients

  • ½ cup vegetable oil ((or melted coconut oil))
  • 2 large eggs

Additional Ingredients

  • 1 ½ cups shredded carrots
  • 1 cup chopped walnuts or pecans (optional)
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar, sifted
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  • Mix dry ingredients in a large bowl; in another, whisk oil and eggs. Combine both mixtures.
  • Fold in shredded carrots and nuts, then pour batter into the dish.
  • Bake for 25-30 minutes; cool completely.
  • Mix cream cheese, powdered sugar, and vanilla; spread over cooled bars and cut into squares.

Notes

For extra flavor, toast the nuts before adding.
