240gripe avocados(about 2 medium)
Chocolate
225gdark chocolate chips or chopped dark chocolate 70% cocoa
Dusting/Cocoa Powder
25gpure cocoa powder(for dusting and optional mix-in)
Sweetener
3tbspmaple syrup or honey(adjust to taste, vegan use maple syrup)
Vanilla Extract
1tspvanilla extract(optional but recommended)
Sea Salt
Pinchsea salt(enhances flavor)
Coconut Oil
1tspcoconut oil(optional, helps set and sheen)
Optional toppings
flaky salt, chopped nuts, shredded coconut(as needed for coating and garnish)
Instructions
Cut avocados in half, remove pits, scoop flesh into a bowl, and mash until smooth.
Melt chocolate gently using a double boiler or microwave, stirring until smooth; add coconut oil at the end if using.
Temper the avocado by mixing a spoonful of melted chocolate into it, then fold in the rest of the chocolate, followed by maple syrup, vanilla, and salt.
Refrigerate the mixture for at least 30 minutes to firm up.
Portion the chilled mixture, roll into balls, then coat with cocoa powder or dipped in melted chocolate; sprinkle with toppings if desired. Refrigerate until set.
Bring to room temperature before serving for best texture.
